I always thought that quiche was some exotic dish based on the price. But I recently learned from the Food Network that quiche is just eggs and milk, one recipe for quiche was mixing eggs, milk and nutmeg.
According to Alton Brown, 1/2 cup of milk (or half and half) and two eggs is the classic quiche mixture and, with a pinch of salt and nutmeg, is known as a royale. You then bake this at 425 for 1/2 hour
What is really neat about quiche, as Alton Brown said, is that you can pour your royale on anything you want and make quiche.
Alton Brown's instruction was to put whatever "fixings" you want in a frozen pie crust, pour your royale over it and then bake. One of Alton's examples was cut up spam and onions.
